Healthy Cooking – Chocolate Chip Oatmeal Pancakes
Asalaam ‘Alaikum:
This is not an everyday food (pancakes just don’t agree with me) – but I am not too strict with our healthy diet that I don’t allow us to have treats from time to time. However, whenever I make a treat – I try to make it as healthy as I can. We rarely eat pancakes at home – but this weekend the kiddos begged for some. I promised I would make them this week – and today was the day. Masha’Allah – the kiddos were happy with the result!
They used to love to eat chocolate chip pancakes when we would eat out – so they have really missed them. I tried today to find a healthier recipe to make for them. This is what I came up with. I got the recipe from The Fannie Farmer Cookbook and I altered it just a tad.
Here’s the original recipe for Oatmeal-Griddlecakes:
1/2 cup quick-cooking oatmeal
1/2 cup milk
2 tbsp flour
2 tbsp butter, melted
1 egg
2 tbsp baking powder
2 tbsp sugar
1/2 tsp salt
Heat 1/2 cup of milk, stir in 1/2 cup quick-cooking oatmeal, and let stand for 10 minutes. Add the remaining ingredients. If the mixture is too wet, add more flour.
What did I change? Well, instead of egg, I used egg whites. I only used 1 tbsp of butter instead of 2. Since I was going to add chocolate chips, I decided to reduce the sugar to 1 tbsp instead of 2. Then, before cooking I added 1/3 cup of chocolate chips.
For an extra treat – I chopped up strawberries and added them to a saucepan with a sprinkle of sugar and a bit of water – just enough to make a sauce, but not so much it is soupy. After heating it up, I poured it over the top of the pancakes. The kiddos enjoyed eating the pancakes alone as well, with only a bit of honey drizzled on the top.
PS: I accidentally 🙂 added the chocolate chips when I first added the warm milk – hence the brown color of the pancakes. The kiddos didn’t mind – but next time I will know better. If you wanted to make Chocolate Chocolate Chip Oatmeal Pancakes – just add a bit of cocoa to the mix.
